1 - 8.5 oz box "Jiffy" corn muffin mix
1/3 cup sharp cheddar cheese, shredded
1/4 cup salsa
1/4 cup pickled jalapeños, chopped (optional) ("Sweet and Hot" is the best brand)
1/3 cup drained corn
4 green onions, chopped
Prepare corn bread as directed on the box. Add all of the remaining ingredients. Pour into a greased pan or muffin tins. Bake at 400 degrees for 15 - 20 minutes or until golden brown.
