Banana Bread


Cassidy and I've been wanting to make banana bread and all of my kids begged me to get Lee Poole's recipe, because we all agree it's the absolute best.  Lee and Bryan are our friends and neighbors and when we're all "porchin' it" together usually the topic of conversation is food.  We love, Lee and Bryan, that you two are fellow foodies and we're always looking forward to hearing about what you guys have conjuring up in the kitchen across the street.  Thank you Lee for sharing another favorite recipe with us. 

1 - 3/4 cup flour
1 - 1/2 cup sugar
1/2 tsp salt
3 ripe banana's, mashed





2 eggs
1 tsp vanilla
1/2 cup vegetable oil
1/4 cup buttermilk + 1 TBSP
1 tsp baking soda
1 cup chopped nuts, like pecans or walnuts (optional)

Mix flour, sugar and salt in a mixing bowl.  Add eggs, bananas, vanilla and oil; mix well. 

In a separate bowl mix the buttermilk and baking soda together.  Add to the flour mixture; mix well.  Fold in nuts if including or place on top of the batter prior to cooking.

Bake at 325 degrees for one hour.
