Mom's Chocolate Pie











Mom's chocolate pie is the best there is.  This relatively easy recipe is rich in reward and in taste.  One of the best chocolate fixes I've found.  Another of many of my Mom's all-time classic recipes.  You've got to try this one!


1 - 9" Pillsbury ready made pie crust
3 egg yolks (save the egg whites for the meringue, recipe to follow)
1 tbsp butter, melted
1 cup sugar
3 tbsp flour
3 tbsp cocoa
pinch of salt 
1 - 1/4 cup whole milk
1 tsp vanilla
meringue (recipe follows)


Butter a 9" pie pan.  Prepare and bake pie crust according to box instructions.  


In a saucepan over medium heat mix beaten egg yolks with melted butter.  Gradually blend in sugar, flour and cocoa; mix well.  Gradually whisk in milk.  Stir constantly until thickens like a pudding consistency.  Pour into baked and cooled pie shell.  Let the filling cool before making meringue.


Meringue:


3 egg whites
6 tsp sugar


Blend with an electric mixer on medium-high for about 8 - 10 minutes until peaks form.  Pour meringue over chocolate filling.  Bake in a 450 degree preheated oven, until meringue browns, about 3 minutes.
