Jimmy Buffett










































All the festivities began Friday. David and I ate lunch together for our weekly ritual of going out to eat at our favorite seafood restaurant, Aw Shucks for their succulent crawfish. The season is coming to an end and the shells are getting noticeably harder. We might have only a couple of weeks until they're gone. :-( They will come back into season around January.

After lunch it was off to the grocery store so my tailgate cooking could begin. I started by preparing Guy Fieri's "Lime Chicken Tequila Tailgating." Recipes all to follow. It was great because I could do all the prep work at home and I had a tasty foil packet all ready to throw on the grill. I made an Asian cole slaw that had crunched up Ramon noodles in it, that I also made ahead of time. For dessert I made chocolate chip cookies. Of course, you've go to have some chocolate...Right?!

Finally, after everything was prepared, David and I headed North to Pizza Hut Park in Frisco. David's brother, Mark had rented an RV that morning and he and his brother-in-law, Stan had been out there all day busily setting everything up...music, shade, decorations, scooters...we were set. It was time for this wonderful party scene to begin. It was a great group of family and friends. Good music, good food, good frosty-cold beverages, outstanding people watching...It was another amazingly fun and crazy Buffett experience!

Saturday started off with a tiny bit of sleeping in and lots more cooking. There was going to be a bigger crowd for Saturday's concert, so we needed to make plenty of food to keep all our peeps, happy, healthy and wise. Saturday's menu included another one of Guy Fieri's recipes, "Jambalaya Sandwiches" which were a huge hit. Another recipe I liked because we were able to do all the prep work at home again, we transfered everything to a slow cooker and plugged that baby in when we got back to the RV. It slow cooked about 4 hours and it was yummy stuff. I will definitely make that again. Guy has this tailgating thing down. I made another one of his recipes, "Artichoke Spinach Dip with Roasted Red Bell Peppers," served with Tortilla chips. Yet another dish I made ahead and we just threw it in the oven long enough to heat it through. For dessert we made cupcakes in honor of Mark's birthday, which just so happened to be the same day of the concert.

Mark and Martha are the biggest parrotheads out there, that is for sure. David's parents, Tom and Sara came out to join us and experience the party scene that is always happening when Jimmy comes to town. Even Martha's parents, Carlos and Mariana came out for a short while to take it all in. It was so great seeing everyone.

This event is very reminiscent of "Burning Man" if you've ever been. You would not believe the number of RVs out there. There are RV's as far as the eye can see. The golf carts too, I never can believe how many there are, all decorated in luau garb and all lively with a cast of characters riding them around the parking lots. Jimmy came on at about 8 and played for a couple of hours. First set he played a lot of his newer songs that I'm not as familiar with, but was still very good. Second set he played more of his oldies. I don't think we sat much at all, we were having too much fun dancing in the asiles.

It was another wonderful time that was had by all. Thank you to Mark and Martha for all that you guys do to make the Buffett weekends such a special treat! Mark, we enjoyed sharing your B-day with you. You two ROCK!!

  2. Buffett is always too much fun! Everything I made turned out great...Guy's recipes are consistently good. I recommend all his tailgating recipes and tips especially. Thanks for checking out my blog.
