Artichokes & Lemon Butter - A side dish to our Grilled Rib-Eye Steak from Kuby's












David grilled a beautiful rib-eye steak last night that we bought from Kuby's. We had the butcher season the steak with their signature dry rub. That is probably the best dry rub we've found. Kuby's is a European market complete with a meat market, deli and German restaurant located in Snider Plaza and luckily for us is only a couple of blocks from our house. They also offer already prepared comfort foods like homemade soups, all kinds of casseroles and their amazing meat loaf. Our favorite side dishes we like to get when we're shopping there is their cucumber salad, their seasoned sauerkraut and their German potato salad, to name a few. Kuby's is known for their jalapeno pimento cheese spread. I love eating pimento cheese on toast with a little dried dill sprinkled on top. You will find all kinds of wonderful foods to try at Kuby's. Definitely worthy of checking out if you haven't already.


As is usual for us, we served the steak with Sara's caesar salad. We usually will also serve with a baked potato but I had some artichokes on hand that we boiled and served with lemon butter instead. Artichokes are our favorite vegetable. They're so easy to cook, but it takes about an hour to boil them. It's WELL worth the wait!


Boiled Artichokes served with Lemon Butter


3 artichokes; trimmed of prickly points on the tip of each leaf with scissors, slice the top inch off of each artichoke with a knife and trim the stems with about an inch remaining
1 TBSP olive oil
Salt and pepper to taste
4 cloves of garlic mashed
1/2 stick Butter
2 -3 Lemons


Boil a big pot of water with olive oil and season with salt and pepper. Once at a boil add juice of 1 lemon, add peel, garlic and artichokes. Simmer on medium-low for 45 minute to 1 hour. Scoop out each artichoke into individual bowls. Top each artichoke with a little of the hot water to make the artichoke blossom. Serve individual servings of melted butter that is mixed with the juice of 1 - 2 lemons, depending upon how lemony you like it.


To eat, dip each leaf in the butter-lemon mixture and scrape the meat off the leaf with the top of your teeth. Discard the remains of each leaf. When you get to the furry part of the artichoke, cut that away and discard. Underneath the fuzzy part is the heart and is the BEST part. Soak in the butter-lemon mixture and enjoy each and every savory bite!
